Sloane Ranger

It is rare that I recommend an entire brand in a post, but I couldn’t pick just one item – so I had to share!

If you are looking for a nautical / preppy gift, then you must check out Sloane Ranger – an online boutique featuring the preppiest of preppy bags and accessories.  Prior to learning about this brand, I had never heard of the term “Sloane Ranger.”   Here is the definition of a Sloane Ranger, according to Wikipedia:

Banana Chia Coconut Muffins

I had some overripe bananas last week, so I decided to make some muffins.  I had  previously used this recipe to make banana bread, but I tweaked it a bit for the muffins, and here is what I came up with (they were super moist and delicious by the way):

1 2/3 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup coconut sugar
2 eggs
1/2 cup virgin coconut oil, melted and cooled
4 bananas, very ripe, mashed
2 tablespoons sour cream
1 teaspoon vanilla extract
2/3 cup walnuts (optional)
2 tablespoons chia seeds (optional)
1 cup semi sweet chocolate chips (optional)

Preheat oven to 350°F.  Grease or line muffin pan.
Sift together the flour, baking soda, cinnamon, and salt. Set aside.
In a separate bowl, beat sugar and eggs until light and fluffy, about 5-10 minutes. Drizzle in coconut oil. Add mashed bananas, sour cream, and vanilla.  Fold in dry ingredients and add walnuts, chia, and chocolate chips (if using).

For Muffins: Pour batter into muffin pan and bake for 12-15 minutes (8-10 for mini muffins)

For Bread: Pour  batter into the lined and greased loaf pan and bake for about 45 minutes to 1 hour.

DIY Father’s Day

We are really getting down to the wire to get Dad a Father’s Day gift, but there is still time to make a creative and thoughtful gift.
