Pumpkin Granola


You know I love giving the gift of FOOD, so it’s no wonder one of my favorite blogs is a FOOD blog!  Flavor Your Health is my friend’s blog that features unique and healthy recipes.  Recently she posted a variety of delicious granola recipes, and showcased a super cute way to store and gift it.

Granola is a healthy holiday treat to give to teachers, friends, and co-workers.

Here is the yummy recipe for Pumpkin Granola:

  • 4 cups old fashioned oats
  • ½ cup raw sunflower seeds*
  • ½ cup raw cashews*
  • ½ cup raw pumpkin seeds*
  • 1 cup unsweetened shredded coconut
  • 1 tbsp cinnamon
  • ½ tsp salt
  • ¼ tsp ground cloves
  • ½ cup coconut oil, melted
  • 1 cup canned organic pure pumpkin puree (not pumpkin pie mix)
  • 1 cup good quality maple syrup
  • 1 tsp vanilla


  • Preheat oven to 325 degrees
  • Line a large baking sheet or 2 medium baking sheets with foil and spray with a bit of olive oil cooking spray
  • Combine the oats, nuts, seeds, cinnamon, salt and cloves in a large bowl
  • Mix all of the wet ingredients together in a different bowl
  • Combine the wet ingredients with the dry and toss/fold thoroughly so that all of the oats are covered in the wet mixture
  • Spread the oat mixture onto the lined baking sheets so that the mixture is as even as possible
  • Put in the oven and set the timer for 25 minutes.  When the timer goes off, move the granola around with a large spoon so that everything will be cooked evenly.  It will still be fairly wet at this point.
  • Set the timer for another 35 minutes.  The granola should be nicely toasted by now.
  • Let cool and then store in an airtight container.
