Congo Bars

I made these last night to take to a family get-together, and let me tell you – they did not disappoint!

Congo bars are very similar to Blondies, but this recipe from Bakerella is chewy on the bottom and crunchy on the top – the perfect combo of gooey and crisp!

I added butterscotch chips and walnuts to mine (as well as chocolate chips):

Congo Bars

2 3/4 cup all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter, softened
1 lb. light brown sugar (Oh my and thank you!)
3 eggs
1 teaspoon vanilla
11.5 ounce package milk chocolate chips
1 cup chopped pecans (optional)

By mixer:

Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.

Snowflakes for Sandy Hook

As a mom and human being, I am terribly saddened by the events that took place almost one week ago in CT.  I’ve been having trouble posting “regular” gift idea posts, as it seems so wrong when so many are suffering.  I’m sure some of you have heard of this campaign, but I wanted to share for those who haven’t.

The town of Newtown is collecting paper snowflakes to donate to the students of Sandy Hook, so their new school will be filled with love from all over the Country / World!

Incase you’ve forgotten how to make them, here is a tutorial from Martha Stewart: How to Make Paper Snowflakes

Here is information from the CT PTSA on how to donate the snowflakes:

Snowflakes for Sandy Hook
Please help the students of Sandy Hook have a winter wonderland at their new school! Get Creative!!  No two snowflakes are alike. Make and send snowflakes to Connecticut PTSA, 60 Connolly Parkway, Building 12, Suite 103, Hamden, CT  06514, by January 12, 2013.
